June's Recipe Compliments of The Meadowlark Restaurant
Beets with Horseradish, Goat Cheese and Pecans
3-4 whole fresh beets; tops removed
1/4 cup freshly squeezed orange juice
1/4 cup mirin; (sweet cooking sake)
1 cup pure olive oil
1/2 cup jar horseradish
salt and pepper
crumbled goat cheese or feta cheese
chopped, toasted pecans
Roast the Beets:
Set the oven to 400 degrees. Lay a piece of foil in a small baking dish and
put the beets on the foil. Drizzle lightly with olive oil. Gather foil
around beets and crimp to seal. Roast for about 45 minutes, or until beets
pierce easily with a paring knife.
Make the Dressing:
Place orange juice, mirin, olive oil and horseradish in a bowl and slowly
whisk in the oil. Season with salt and pepper. Or, put it all in a jar
together and shake like mad!
Allow beets to cool, then gently peel and trim them. Cut them into
bite-size dice, about 3/4" square.
Arrange beets in one layer on a platter or individual plates or bowls.
Sprinkle with salt and pepper. Spoon horseradish dressing liberally over
beets. Sprinkle well with crumbled cheese and pecans. Yum!

The Meadowlark

Chef/Owner Elizabeth Wiley and Chef Dave Rawson along with their dedicated staff combine to create a small, contemporary, art-filled restaurant where the mood is relaxed, the service is welcoming and knowledgeable, and the food is fantastic. Serving lunch, dinner and a killer Sunday brunch, cooking is at the top of the list here, where everything coming out of the kitchen is made from scratch, including the ketchup and pickles that accompany our big, juicy sandwiches! Whether it’s crispy, slow-roasted chicken thighs, grilled fish with bold, fresh sauces, a plate of shrimp and grits or a portabello mushroom cooked like a steak, food and friendliness are the focus.
Says Wiley, “I wanted to run a casual place that set as high a standard for ingredient quality and cooking skills as you would find in a fine dining restaurant. I think with The Meadowlark we have really fulfilled that vision—it’s a great little place with an energetic, local vibe where you can get really good things to eat and drink”.

In Loving Memory of Jay Haverstick – A Dayton Icon
On behalf of the Miami Valley Restaurant Association Board Members we would like to extend our deepest sympathies to the Haverstick family. Jay Haverstick was truly a pioneer in our industry and a true gentleman. Jay touched many people in his years with us and will remain a part of our community forever. Jay’s death is a tremendous loss not only to the Miami Valley Restaurant Association and its members, but to Dayton and the Oregon District. The well loved restaurateur was also an avid photographer, Jay took great pride providing his friends and guests with his yearly calendar that showcased his photographic skills. Jay was visiting Death Valley with a college friend, snapping photos of the sand dunes when he was reported missing early Tuesday May 19th. Park employees and other rescue personnel, aided by a California Highway Patrol helicopter, searched for Mr. Haverstick on Tuesday afternoon and resumed the search Wednesday morning. He was found dead on Wednesday afternoon.
The MVRA’s President, Amy Haverstick, (Jay’s daughter) Idy, (Jay’s wife) employees of Jay’s Seafood and the rest of the Haverstick family and friends, are in our thoughts and prayers.
